Dore,
You are definitely invited any time :hugfriend so when is your plane landing at Karachi International Airport ? :wink
Andy,
Here is the recipe for Sheer Khurma :wink this is a more traditional one ,
Pour the ghee in a large pot over a low flame. Fry the cashew nuts in the ghee until browned. Turn off the flame and add the raisins. When the raisins swell up, take both them and the cashews out of the ghee with a spoon and set aside. Switch the low flame back on and heat the ghee. Fry the vermicelli in the same ghee, stirring so it turns golden-brown. Watch it carefully so it does not burn. Pour in the milk. Add the cashews and raisins back into the mixture. Add the sliced dates and almonds. Cook for about 2 minutes, or until the vermicelli starts to get flexible; then add sugar. Keep on the low flame for another 2 minutes, then add cream and cardamom powder. Heat just a little longer and mix well. Serve hot. Serves 12.
But as i said its a more traditional one,the way i cook Sheer Khurma is really simple,as i don't like ghee or oil in my Sheer Khurma, what i do is i soak almonds and pistachios overnight and boil them in little amount of water in the morning, then i take the skin off of almonds and cut them both in slices, heat up the milk, add vermicelli according to your taste ( if you want it thick add more,if you want it thin add less ) add almonds and pistachios, and let it cook until the vermicelli is soft, then i add sugar per taste, and delicious and simple Sheer Khurma is ready :wink Enjoy :wink and do tell me how you liked it.And yeah i almost forgot, you can add a tiny bit of Saffron also if you like the aroma and flavor of it.
Zaini.
P.S Eid mubarak to you too Emby :hugfriend

Sorry for my late reply,i had a bad connection.
Here is the recipe for the kahk
Kahk is the most famous cookies all around the midle east countries during the feast period and the end of Ramadan month. They are commonly filled with Dates, walnuts, turkish delight or agameya. But the most famous are plain without any filling and dusted with powder sugar.
Servings: 24 cookies
Ingredients500 gm flour. 250 gm ghee. 50 gm soft butter. 20 gm powder sugar. 15 gm active yeast. 100 gm lukwarm water. 1 tsp kahk extract.(found in all middle east groceries). 1 tsp Mahlab extract..(found in all middle east groceries).
Filling varity: Walnuts: 1/4 cup walnuts 1tsp cinnamon 3 tsp powder sugar 1 tbsp rose water. Mix all ingredients in food processor till it become pasty.Shape into very small balls.
Agwa (date filling):
250 grams dates. 25 gram butter. 1 tsp cinammon. In a heavy saucepan, over medium heat mix all ingredients together till the dates are pured using a fork so that all the dates absorb the butter.keep aside till cooled and form into very small balls.
PreparationMethod:
1-In the bowl of your mixer, using the paddle attachement, mix together the flour, butter and ghee till all combined. 2-Mix the yeast with the water, sugar, kahk extract and mahlab.Put the mixture for 5 minutes aside. 3-Mix the water mixture with the flour mixture using the mixer then continue with your hands till all water is absorbed and then knead it for 15 times. 4-Using your hands, make small balls of the batter and keep aside for filling. 5-In the palm of your hand rub a batter ball and make a hall in the center, dip a small filling ball of your choice inside, fold the batter over it and rub again. 6-Arrange all balls in a large nonstick baking tray and bake for 25 minutes in a 375F preheated oven. 7-Take out of oven and cool. Some people may dust the cookies with sifted icing sugar specially the walnuts filling. Yes, Zaini it is an arabic sweet with cheese. Manal can explain it further. I thought that all Muslims had kunafah by tradition but obviously I was wrong.
By the way, your hand is gorgeous!
Eid-ul-Fitr Mubarak to all of you!
Lena.

Hi Lena and Zaini :hugfriend
Kunafa is made by drizzling a row of thin streams of flour-and-water batter onto a turning hot plate, so they dry into long threads resembling shredded wheat. The threads are then collected into skeins. (http://www.travelshopturkey.com/cooking/images/kunafa.jpg)
You can make kunafa in many different ways. For example Kunafa nabulsi is made by making two layers of kunafa stuffed with nabulsi cheese (like the ricotta cheese) then you pour over them aheavy sweet syrup and finally sprinkle some nuts over it (very famous in Jordan, Syria, Lebonan, Palestine) (http://www.saharamiddleeasterneatery.com/images/page-desserts2.jpg)
In addition to the above, it can be stuffed with custard, full cream and nuts. (http://orangeblossomwater.files.wordpress.com/2009/04/new-946.jpg)
For quick recipe, you can fry the rough kunafa on a pan then put some bananas and honey over them (http://files.websitewizard.com/files/585/images/Osamlleih.BMP)
Now a days some people goout of traditionans stuff it with fruits and cream like strawberries, dates, rasberries or marron glace. But my favorite is mangos with cream (http://static.zooomr.com/images/8023483_ff4df5ac22_o.jpg) (http://papaya.com.sa/items/img_119.jpg) Hope i can invite one day on a plate of kunafa :wink
